Muffins for Breakfast

Last year I moved out, away from Hotel Mama, which included this wonderful 24h all-you-need-and-more service. I think I can speak for everyone that has recently moved out from home, when I say that you have never appreciated your parents more than in the moment when you realise that from now on you have to do your laundry yourself.

Jason and I are horrible when it comes to doing the laundry. I mean we are a hopeless case. It has happened more than once that I had o wear bikini bottoms because of a lack of clean underwear. Jason once dried himself with a tea towel after a shower because all the bath towels were in the washing. Yes. Horrible. Mama where are you?

Having said that, I do have some housewifey qualities. I try to always keep everything tidy and I actually like washing the dishes. I only have one requirement. While doing those chores I have to listen to something entertaining, and for a while this has been the Joy The Baker Podcast by Joythebaker and Shutterbean. I am sure most of the blogging world is familiar with Joy, however if you have never tuned in to one of her podcasts, I highly recommend you do.

Now the thing is, I have just caught up with all episodes of the podcast, and now I have to wait for one week until the next one comes out. An eternity!! And this is were audiobooks come into play. You might have been listening to audiobooks for years already, but being a technological retard, I only discovered their awesomeness now.

Today, while doing the dishes, I listened to Hans Christian Anderson’s fairly tales. Online. For free. Totally blew my mind. In case you haven’t been an audiobook fan already, check out http://www.booksshouldbefree.com/!

But now back to business, and let me charm you with this little treat.

These muffins are so guilt-free and healthy, they shouldn’t even be called muffins and be confused with their empty calorie loaded relatives. They are full of stuff that’s good for you and provides you with the energy to be spiderman for the day. See? That’s why we are having them for brekkie. Because everyone knows that breakfast is the most important meal of the day we are making it a fantastic one!

No butter, no sugar, but a buckload of veggies instead!

Carrot Zucchini Muffins

(makes 6 muffins)

  • 3/4 cup spelt flour (alternatively all-purpose flour would work as well)
  • 3/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup grated carrot
  • 1/2 cup grated zucchini
  • 1 mashed banana
  • 1 tbsp honey
  • 1 tbsp ground flax seeds (+ 3 tbsp water)
  • 1-2 tbsp almond milk (alternatively low-fat milk/water)
  • 1/4 cup chopped almonds

-  Preheat you oven to 180C. Mix the dry ingredients together in a mixing bowl. Add the carrot, zucchini, banana and honey and stir until everything is well combined.

In a separate small bowl combine the flax with the water. Add it to the other ingredients. Add 1 tablespoon of almond milk at first and only add more if your dough mixture is too dry. Fold in the almonds. Divide mixture into 6 muffin cases. Bake for 20-25 minutes until the top is very crispy and the muffins are firm to the touch.

The best thing about those muffins? They taste like something special, something sinful and sweet. All that, by being a healthy  energy booster. Seriously. What more could you want from your breakfast muffin?

And PS..: They freeze wonderfully for a quick no-fuss snack on-the-go.
